You may omit any ingredients you don&#039;t like.

Cut up and saute in any quantities you desire:
good smokey bacon (like the ends and pieces packs)

mushooms
green and/or yellow onions
red or yellow peppers
fresh garlc 
Add the vegies after the bacon is almost done, so they dont over cook. When everything is done just how you like, you can transfer to a baking pan or leave in the skillet and cover with shredded cheese.  Beat enough eggs to cover and pour over mixture and bake.
You can add salsa to the beaten eggs for a kick!

In a non stick frying pan, bring water to a boil.  Put two slices of grainy bread down to toast until crunchy.  Crack eggs into water (careful not to boil over).  When the water starts to foam and rise, turn off heat. Butter the toast, cut into chunks and put on plate or bowl.
Usually, you can pour the water off your poached eggs and they will stay slightly stuck in the pan (nothing worse than soggy).   Put the eggs on the toast with pepper, spike or any other spices you like.
